Whether you enjoy Quiche as breakfast, lunch, or dinner – this Mediterranean Inspired Turkey Quiche will leave you wanting more. Homemade or store bought pie shells will work well with this recipe. This recipe yields 2 quiches using store bought crust.

- Hayter’s Farm Turkey Bacon (1/2 pkg). We recommend you take half of the bacon out of the pack without separating into slices. From there, you can ‘cube’ the bacon and it will stay in larger chunks. See video on our Instagram or Facebook for details.
- 1 Cup Cherry Tomatoes, Halved
- 2/3 Cup Kalamata Olives, Sliced
- 3/4 Cup Feta Cheese, Crumbled
- 2/3 Cup Red Pepper, Diced
- 2/3 Cup of Onion, Diced (We used green oni0n that we had on hand – but red onion would be delicious, too!)
- 1 Cup of Wilted Spinach
- 6 Large Eggs, Beaten
- 1 Cup of Milk or Cream (We used a mixture of both)
- Salt and Pepper to taste
- 1 tsp Oregano
- 1/2 Cheese of your choice to top (Optional – we loaded ours with feta, so we skipped the cheese on top)
- 1 large homemade crust or two store-bought crusts.
Method of Preparation
- Preheat oven to 400F.
- While preparing the rest of the ingredients, bake your pie crust until firm, about 8 minutes; but, could vary depending on the thickness of your crust. Once done, remove crust from oven and set aside. Turn oven down to 350F.
- Mix the eggs, milk, oregano and salt and pepper and in a bowl until well combined and set aside.
- Prepare and divide each of your toppings into two and sprinkle into the bottom of each of your crusts, ending with the feta cheese.
- Pour the egg mixture into evenly into each crust.
- If you choose to add extra cheese, now is the time to top the egg mixture with it.
- Cook at 350F until a knife inserted into the center comes out clean. Likely 45 minutes, or so.

Serving Information
If you have one quiche, it will feed 4 with a side salad.
