This delicious skillet has a wonderful balance of macronutrients and deserves a spot on your list of healthy meals this year! It’s delicious the way it is, or, you could change it up by adding some of your fav spices or sauces.


Ingredients

1 x Package of Hayter’s Farm Ground Turkey
3 x Garlic Cloves, Minced
1 x Medium Onion, Chopped
1 x Medium Sweet Potato, Diced
1 x Can of Black Beans, Drained and Rinsed
1/2 x Broth of Choice
1 x Cup of Shredded Cheese of Choice
1/2 Packet of Taco Seasoning, or, Make Your Own (Spices below)
Green Onion to top. Alternatively, you could use Jalapeno’s, Olives, Sesame Seeds, Fresh Herbs etc.

Taco Seasoning
1 tsp Chili Powder
1 tsp Cumin
1/2 tsp Onion Powder
1/2 tsp Garlic powder
1/2 tsp Smoked Paprika
Salt and Pepper


Method of Preparation

  1. Sauté your onion and minced garlic until soft.
  2. Add in your ground turkey and brown. Once browned, add taco seasoning.
  3. Place your washed sweet potato in microwave or air fryer at 350F for 2 minutes to soften it.  Let it cool before cubing it. *Don’t skip this step!*
  4. Add the sweet potato and broth and add a lid to your skillet. It will take about 10 minutes for the sweet potato to become fork tender.
  5. Once the sweet potato is tender, add in the black beans and mix well so that all ingredients are incorporated. Reduce heat to low and add cheese. Put the lid back on and let the cheese melt.
  6. Top with green onion and any other desired toppings.Yields 4 servings.
