This Turkey Fajita Bake is great for those nights where you don’t have much time to make dinner but want something that is filling and nutritious. Add beans, different veggies like corn or your own spices to make it your own!
Ingredients
- 1 Pkg Turkey Scaloppini or Turkey Breast, Sliced Into Strips
- 1 x Red Pepper, Sliced Into Strips
- 1 x Green Pepper, Sliced Into Strips
- 1 x Small Onion, Sliced Into Strips
- 2 Cups of Minute Rice
- 2 Cups of Broth of Choice
- 1 x Pkg of Fajita or Taco Seasoning
- 1 x Cup of Shredded Cheese
- Tortillas and Toppings of Choice (Or, make into a rice bowl!)
Method of Preparation
- Preheat oven to 375F.
- Mix the rice, broth and seasoning in a glass baking dish.
- Add the peppers, onions and any other toppings you may want.
- Place the Turkey on top and cover.
- Bake for 45 minutes, then add cheese and put back in the oven, uncovered, until the cheese is melted.
- Serve with your fav toppings like salsa, sour cream, or chipotle. Serves 4.
