Need a new salad idea? This one combines a unique dressing with red cabbage and turkey that will have everyone asking for this delicious recipe!  Of course a healthier,  lower fat alternative to ‘mayo’ laden traditional salads. Serve on a large plate or bowl, lined with lettuce leaves. This refreshing salad serves approximately 6 guests.


Ingredients

1/4 cup red wine vinegar

1/4 cup lemon juice

2 tbsp olive oil

1/4 cup dijon mustard

1/4 pure honey

1/4 cup finely chopped red onion

1 tsp. grated zest of one small orange

1 can mandarin oranges

4 cups cooked turkey breast, cubed

1 1/2 cups celery, chopped

1 1/2 cup red cabbage, chopped

3/4 cup raisins


Method of Preparation

Whisk together all wet ingredients. Add onions and orange zest. Let dressing sit at room temperature for about an hour. In a large bowl, mix turkey, celery cabbage and raisins. Pour dressing over salad and toss well to coat. Arrange mandarin oranges on top. Chill for 2 hours or more. Serve on a large plate or bowl lined with lettuce leaves. This delicious salad will feed 6 servings.
