This is a yummy Pasta Salad that can be enjoyed throughout the Summer. You can customize the ingredients and dressing to meet your liking. The best part is that it can be made ahead, either as meal prep, or, in preparation for a big event. Adjust the portion sizes to meet your needs – the below recipe serves approx 10-12 people as a side.
Ingredients
- 1 x Pkg Hayter’s Farm Unseasoned Turkey Fillet (switch this up for a flavored fillet, or, our turkey steaks)
- 1 x 450g Pkg Pasta of Choice, Cooked
- 1 x Large Bell Pepper, Diced
- 4 x Green Onion, Sliced
- 1 x Cucumber, Diced
- 1 x Cup Broccoli, Chopped (Into small bits)
- 1.5 x Cup of Cherry Tomatoes, Halved
- 1 x Cup Feta
- 1 x Cup Kalamata Olives
- 1 x Cup Dressing of Choice (Greek, Italian, Balsamic etc)
Method of Preparation
- Cook pasta to El Dante, drain, and cool pasta with cold water to stop the cooking process.
- Season your turkey fillet with salt and pepper and add to a pre-heated (medium heat) skillet. You know the turkey is ready to be flipped when it releases from the pan easily. Cook to 165F internal temperature.
- Chop vegetables/toppings.
- Add vegetables/toppings to pasta and mix well.
- Add dressing of choice to pasta and mix again.
